1. To each pound of mix add 2 1/4 cups (18 oz) cold water.
2. Batter temperature should be 65-70F.
3.  Mix until smooth.
4.  Let rest for 10 minutes.
5.  Pour through 1/2" funnel in overlapping circular motion. (Thin or thicken with water or mix, if necessary.
6.  Fry 45 seconds on each side at 375F. Yield: 5 lbs. dry mix makes 24 eight inch funnel cakes. Note: Method of frying mixes.
7.  An 8" or 10" frying skillet containing 1 1/2" to 2" of fresh frying fat can be used for small quantities.
8. Fabricated rings or 8" or 10" skillets can be placed on the drop screen of
   an open kettle with the tops level with the surface of fat. This will hold a
   good circular shape when frying the first side. Note: The quality of any
   fried products depends heavily on proper frying temperature. USE A FAT
   THERMOMETER.
